
Being a vegetarian and pregnant, I get lots of people wondering if I get enough protein and from where. I wanted to show you an easy lunchtime idea that was really tasty and filling. The nutritional counts consist of approx 358 calories, 17.3g of protein and 16.2g of fibre! I added a tangerine to give it a bit of citrus flare which really worked with this combination.

Navy Bean & Couscous Salad
Makes 1 serving or 2 side dishes

Ingredients:
- 1/4 cup of dry whole wheat couscous
- 1/4 cup water
- 1 cup drained & rinsed canned navy beans (I used Eden Organics as they are in a BPA-free lined can and for ease of use)
- tangerine, peeled & cut up
- 1/4 of a cucumber, diced
- 1/4 tsp olive oil
- dash of apple cider vinegar
- sea salt & fresh ground black pepper to taste
Directions:
- Bring 1/4 cup of water to a boil and then pour over the dry couscous in a covered pot. Leave covered for 5 minutes.
- Once couscous is cooked, place in a bowl. Add the rest of the ingredients, mix and enjoy!
