I’ve got a good recipe to share with you today. It’s very simple but tastes gourmet. Definitely one you could serve to guests. It’s similar to a risotto without the extra work and time of having to stir it constantly.
The goat cheese is added at the end and mixed in to create the creaminess of a risotto. We loved it. You could also use whatever vegetables and beans you have available, and I’m sure this would taste just as good using ricotta cheese. I’ll be trying that next.

Rice, Mushroom, Spinach, Chick Pea & Goat Cheese “Risotto”
Serves 2-3 people

Ingredients:
- 1 cup brown rice
- 10-15 mushrooms (more or less to your preference), washed and sliced
- spinach, washed
- 1 cup cooked chick peas
- goat cheese
- sea salt, to taste
- black pepper, to taste
- red chili pepper flakes, to taste
- 2 tsp extra virgin olive oil
Directions:
- Cook rice according to package.
- Heat oil in a fry pan, then add the mushrooms, salt, pepper and chili flakes. Let mushrooms cook over medium heat until tender. Add in spinach and chick peas just until spinach wilts and chick peas are warm.
- Serve the mushroom mixture over the rice. Add goat cheese and stir together until desired creaminess has been reached. Enjoy!
