I just made the most enjoyable sandwich I’ve had in a LONG time. It was so good that I felt the need to share it with you. Please don’t mind the picture, where one is just about gone. I hadn’t intended to capture it and make a post out of it until after I tasted the goodness.

A couple of weeks ago, Ian and I made our way to our local Italian grocery store – Grande Cheese. We decided to get one of our fave cheeses, Friulano, while we were there. It has been a long time since we have had this in our house. I remember why now. Cheese doesn’t last very long in our house, we devour it. So I needed some restraint and have been doing pretty good, only a couple slices a day. Now that’s self control. Needless to say, this cheese is part of the sandwich.
I bought an organic zucchini while I was out this morning and thought it would be great grilled on a sandwich with lettuce, cheese and dijon mustard. Was I ever right! So if you need a change from your ordinary lunch sandwich, give this a try. It will delight. I promise.

Makes 1 Sandwich
Ingredients:
- 1 small organic zucchini, washed, cut in half, the sliced lengthwise (I made 8 relatively thin slices)
- 1 small (or big) piece of Friulano cheese, shredded
- handful of organic green leaf lettuce
- Hot dijon mustard
- 2 slices of your favourite sandwich bread (I used Country Harvest Vitality Whole Wheat – no fat or sugar added bread – loving this bread)
Directions:
- Brush a tiny bit of oil onto a grill pan. Grill the zucchini on both sides sprinkling with a little salt and black pepper.
- Spread dijon mustard on one slice of bread. On the other slice, layer the grilled zucchini, shredded cheese (so it will melt nicely), lettuce and then close the sandwich with the other slice. Cut in half if you like and enjoy!
