
My husband has been wanting pancakes for weeks now, so I decided to surprise him this Saturday morning with some pancake goodness. He was in heaven and ate all of them! I used a mixture of spelt and whole wheat flour and quick oats as the base. This recipe is vegan friendly and packed with nutrition.
Blueberry Banana Mango Spelt ‘Buttermilk’ Oatmeal Pancakes
Ingredients:
- 1/2 cup soy milk (or any type of milk)
- slice of lemon
- 1/4 cup whole wheat flour
- 1/4 cup spelt flour
- 1/4 cup quick oats
- 1 tbsp ground flaxseeds (or chia seeds)
- 3 tbsp water
- dash pure vanilla extract
- 1/2 tsp baking powder
- pinch sea salt
- dash cinnamon
Directions:
- In a small bowl, combine the ground flax or chia seed with the water.
- Combine the flours, oats, cinnamon, baking powder and salt. Mix well.
- In another bowl or measuring cup, mix the soy milk with a squeeze of lemon to create the “buttermilk”. Add the flax or chia egg and vanilla. Mix together.
- Pour the liquids into the dry ingredients and stir. Add the blueberries. If batter is too thick (most probably will be), start adding in some water a bit at a time until you have a slight runny batter. While you wait for your pan to heat up, it will thicken slightly.
- Heat a pan on med-high to high temperature. Once hot (sprinkle some water and if it bubbles the pan is ready), pour the batter into whatever size pancakes you’d like. I added in the banana once they were on the pan.
- Flip once.
- Enjoy with your favourite syrup, jam, fresh fruit or anything you can think of!
